The owner and chef, who apprenticed for 16 years at a nationally renowned kappo (traditional counter-style fine dining) restaurant, serves a prix fixe menu using seasonal ingredients for 22,000 yen. He thinks outside the box to tantalize his customers’ eyes and taste buds. The collagen-rich nodoguro (blackthroat seaperch) prepared in the style of yakitori negima (broiled chicken pieces skewered alternately with green onions) is a playful rendering of a fish dish enjoyed with grated cucumber. We also suggest enjoying these dishes paired with wine or sake recommended by the chef, a certified sommelier and a sake connoisseur.
